Quick and delicious -- I'm not sure about nutritious!

Ingredients
- 2 pie crusts
- 1 stick of butter
- 1 T. olive oil
- 3 cups of veggies (I used half of one giant onion and 10 oz. sliced mushrooms)
- 10 eggs, whisked energetically
- 1 pt. half and half
- shredded cheese
Instructions
- Two glass pie plates 9"
- pie crusts (I used Trader Joe's but you can either make your own or use PET frozen crusts, thawed)
- Pre-heat the oven to 450 and prick the bottoms of the pie crusts with a fork. You should line the bottom with beans to weight it down but I forgot, and it still worked fine. Bake for 9 - 10 minutes.
- Meanwhile, melt ½ stick of butter and 1 t. olive oil in a skillet and put in vegetables -- sliced onions, mushrooms, chopped broccoli or spinach, enough to have 2 c. when cooked. You can add seasonings like salt and pepper or curry powder or a little cayenne...whatever flavors you like.
- Once the pie crusts have cooled, and the veggies are soft (and not producing more liquid), divide the veggies and place in the pie crust. Cover with a layer of shredded cheese.
- Next, make the custard by whisking the eggs and half and half together. Melt the remaining half stick of butter and add to the egg mixture. Give it all a good stir and season with more of the same that you used for the veggies. Pour to fill the pie plate or just below, and return to the hot 450 degree oven for 10 minutes. Reduce heat to 375, and cook for another 20 minutes.
- Remove and enjoy!
