Ingredients
- First, put a full tea kettle of water on to boil.
- 1 med./large onion
- 1-2 cloves of garlic, crushed
- 2 c. red lentils
- 1 large can crushed tomatoes
- ½ jar garlic chipotle salsa (med. hot)
Instructions
- First, put a full tea kettle of water on to boil
- Saute onion and garlic in the soup pot until soft using approx. 1 T olive oil and 1 t dried basil
- Add in 2 c. red lentils, 1 large can crushed tomatoes
- I use the boiling water to rinse the tomato can (and fill it about 2-3 times)
- Simmer, covered at least 45 min.
- Add in ½ c. garlic chipotle salsa (med. hot)
- This recipe is so flexible, I've made it with tequila and lime to garnish, or mango salsa, or served over cornbread, or with other veggies sauteed at the beginning.
