Blueberry Kuchen (my mom's version of Florence Eiseman's recipe)

My grandmother Florence Eiseman was well-known for her children's clothing, not her cooking. We only inherited one recipe from her and this is it!

Ingredients
  • Crust:
  • 1 c. flour
  • ⅓ c. sugar
  • 1 stick of butter
  • optional 1 egg yolk
  • Filling
  • 1 pint blueberries
  • 1 T flour
  • 1 T sugar
  • 2 T butter
Instructions
  1. For an 8x8 or 9x9 pan
  2. Preheat oven to 375
  3. Crust:
  4. Mix together until dough can form large clumps. Press into the bottom and sides of an oven-proof baking dish (I use Pyrex glass square)
  5. Filling:
  6. Mix together and spread on the crust.
  7. Dot with butter
  8. Bake 30 minutes until crust is golden brown.
  9. Some versions of this recipe (even in our family) have some lemon juice or lemon zest, and we always serve it with vanilla ice cream (although I experimented and ginger ice cream was delicious, too!)
